NGE is an excellent piece of work, while simultaneously being all the way up its own a**
The hilarious thing about NGE is that it's an almost blatant ripoff of the Ultraman franchise, which is way more Tokusatsu than mecha.
The Evas' operational time limit, the "giant of light" motif, heck, even many of the Angel designs borrow cues from Ultra Kaiju and aliens. And that's when they aren't ripping off Godzilla (The Operation Yashima setup sequence was lifted wholesale from 1964's Godzilla vs Mothra when the army sets up the artificial lightning trap for Godzilla. Which is also hilarious, because the ending of Shin Godzilla is basically Operation Yashima with Godzilla window dressing. Jet Alone from the episode "A Human Work" is basically Jet Jaguar, etc.)
That said, yeah, it's influence on the mecha anime that followed is undeniable, for better or worse.
It’s a decent premise for a story but I’m convinced Anno intentionally sabotages the ending every single time given how excellent his work with properties he doesn’t own are.

Also has some more... problematic elements regarding how it chooses to, uh, let's call it "male gaze" the two main 14-year old girls characters.
I wouldn't say it's the Star Wars (I feel like that's Macross, or at least it used to be), but it's definitely up there. The fact that it also appeals to the separate-yet-related tokusatsu fandom is part of it too, of course.
Part of Evangelion's influence is the behind-the-scenes talent; most of the people who made the series either already were or became industry giants who went on to teach the current generation.
Anno was also famously having mental health issues during the production of the original series (exacerbated by problems related to the production itself). He's in a much healthier place now, which is why his modern works are generally less bleakly nihilistic.
One theory (or maybe it originally came from an interview, this was back when Eva was only available untranslated) is that each Angel is a metaphor for Anno's work on a previous project, so he was not only pulling a "men will do anything other than go to therapy" there, he was also specifically exorcising his demons about previous jobs.

NGE is a great and highly iinfluential series but, at least in the English-speaking anime fandom, its reputation is still heavily colored by people who watched the show while having a negative perception of the mecha genre so you still get people repeating claims like 'Anno hates otaku' or 'NGE is a deconstruction of mecha because Anno hated the genre!' and jive like that.
When in reality the dude is a huge fuckin nerd for mecha and tokusatsu and the whole series is full of shout outs and references to series he loved.

It's not even a fuckin deconstruction so much of the jive people love(d) to point to as 'deconstructions' of mecha tropes was done in the 70s during the early days of the genre
