As far as I know, NGE was hugely influential on mecha anime, and anime in general. It holds a position in Japan that, like, Star Wars does in America. It's everywhere, still, to this day.

The hilarious thing about NGE is that it's an almost blatant ripoff of the Ultraman franchise, which is way more Tokusatsu than mecha.
The Evas' operational time limit, the "giant of light" motif, heck, even many of the Angel designs borrow cues from Ultra Kaiju and aliens. And that's when they aren't ripping off Godzilla (The Operation Yashima setup sequence was lifted wholesale from 1964's Godzilla vs Mothra when the army sets up the artificial lightning trap for Godzilla. Which is also hilarious, because the ending of Shin Godzilla is basically Operation Yashima with Godzilla window dressing. Jet Alone from the episode "A Human Work" is basically Jet Jaguar, etc.)

That said, yeah, it's influence on the mecha anime that followed is undeniable, for better or worse.
