Spielberg likes filming conversations in long takes, but he wouldn't be known for it if it were the default. Usually stuff is filmed in bits and pieces, or batches.

The problem isn't that it focused on Sam, the problem is that Sam's parts were the most cringy, poorly written bits of the movie and were excruciating to watch.
