I would assume it's a scene from an episode, so you'd have to go through and catch a clean freeze-frame of it.

Nah, there was no such scene in the show.

Plus, that art is too stylized to have been from an episode.

Lots of anime openings have artwork and animation that are exclusive to them, not found in the actual episodes. This is just another one of those cases.

Then again, the same is also true of many western animation openings.
