You guys. If you can, make this recipe. Takes some work but definitely worth it.
From the Final Fantasy XIV cookbook, vol 2
Basically a pineapple upside down cake. It is SO good. All other pineapple cakes I've had are now trash in comparison.
Notes: Either my scale is off or the difference in some of the weights/measurements are off. Eg, I added 1 tsp of cinnamon instead of half a tsp and it didn't equal 1gm of weight. I didn't compare everything, but the weights of the large amounts of ingredients seemed fine while the smaller amounts were off. Either way. The extra cinnamon certainly didn't hurt it. I also ended up using a 20oz can of pineapple which had just enough slices and some juice leftover. I just shook off some of the juice before putting it in the pan.
