Bonus points for Drop Dead Gorgeous and The Thirteenth Floor mentions, those don't get much attention nowadays (or when they came out, I guess...)
Not mentioned already:
Payback - Excellent Mel Gibson noir film and funny to boot. Not a fan of the director's cut ending at all.
Dogma - Hilarious and poignant. When I think of Kevin Smith's descent this is the film that makes me saddest for it; what a waste.
South Park: Bigger, Longer, Uncut - I don't know how well it holds up as I haven't seen it in forever, but this was a pretty big event for a young me. It'd be like if a Simpsons movie came out while the Simpsons was still relevant and funny.
The 13th Warrior - A notable box office bomb with a troubled production, but I think it ended up a brilliant re-imagining of the Beowulf epic.
Sleepy Hollow - My favorite Burton/ Depp collaboration, it's just brimming with everything that's best about those two and a delightfully wicked spin on the old story. It also contains one of my favorite film cameos of all time.
