Are we certain its made from Marzipan? To be honest, it wouldn't shock me if it was constructed using Playdough.

Cakes store quite well in freezers.
Alternately, one could just be bidding to acquire the services of the creator to make something similar on a date requested by the winner. This does imply customer pick-up or local delivery, though.
