I've had a dish that I've made for a few years that a lot of people like and tend to get asked for the recipe a lot. I figured with the random food threads here why not start a new one for our favorite recipes? This one was inspired by a dish from Ruby Tuesdays.


Easy Mexi Cheesy Chicken Pasta bake

1 box pasta, cooked (anything from Penne to Rotini. Anybite sized pasta)
1 23 oz can of Tostitos Salsa con Queso
1/2 can of black beans
1 small can Southwestern Corn
1 package of Foster Farms Pre cooked Southwestern Chicken Breast strips (diced)
1 cup milk
1 small or medium bag of Mexican or southwestern blend cheese shredded

Combine all but the cheese into a mixing bowl until salsa coats the other solid ingredients. Pour into a medium cassole dish and cover dish with the shredded cheese. Bake at 350 for 15 to 20 minutes. Perfect for family gatherings


Optional: Top cheese with nacho sliced jalepenos or Pico de gallo salsa

for my family get together events I use the following

1 x Bottle of Scotch
1 x Bottle of Coke

and then I can deal with the family.

Daith, I'm going to have to try that. How much would I have to adjust if I used a vegan substitute for the chicken?

Ya got me? The packages are bout the size of your basic lunch meat trays these days. Package says 6 oz.
